Score an A+ with peanut butter granola bars

It’s the middle of August. That means sweet relief for those of us who have been scrambling all summer to keep our kids entertained. That’s right, it’s back to school time. Let the celebrating begin!

And, lest you get bored while reveling in your newly regained freedom, you might want to make these easy, healthy and oh-so-delicious Chewy No-Bake Peanut Butter Granola Bars for your little darlings to enjoy after a long day out in the trenches.

These bars are a rich, crunchy and chewy jumble of nuts, oats, cereal and dried fruit that is just barely “glued” together with peanut butter and honey. The beauty of this recipe is that it takes very little time and effort to put together. Just mix the dry ingredients in a bowl, stir in the gooey liquid, press into a pan and chill. No baking involved! And any combination of fruits and nuts will work here, as will any kind of nut butter.

So, get your kids — and yourself — off to a great start this school year. Served with low-fat yogurt for a nutritious breakfast or enjoyed as an after school snack, these granola bars score an A+.
